- 1/2 to 1 teaspoon freshly ground black pepper
- 1 teaspoon finely chopped fresh sage leaves
- 1 teaspoon finely chopped fresh thyme leaves
- 1/4 teaspoon finely chopped fresh rosemary leaves
- 1/2 tablespoon coconut sugar or light brown sugar
- 1/4 teaspoon fresh grated nutmeg
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon red pepper flakes

- Form into 2-inch rounds. Refrigerate and use within 1 week or freeze for up to 3 months. For immediate use, saute patties over medium-low heat in a non-stick pan. Saute until brown and cooked through, approximately 10 to 15 minutes.

INTERESTING FACTS ABOUT NITRATES
The nutrition facts for the average sausage patty includes a bunch of *crap* that you don’t want in your body, including nitrates!
Nitrates by themselves aren’t too bad – they’re natural and present in foods that we eat – but too many nitrates can cause problems like leukemia, lymphoma, and many kinds of cancer, especially when they’re changed into nitrites through high-heat cooking.
Nitrites are carcinogenic and can also cause cancer!ย Avoid these by making this FRESH and LEAN breakfast sausage instead of picking up the boxed kind.

Alton Brown’s Fresh and Lean Pork Breakfast Sausage Recipe FAQs
1. Why make homemade sausage instead of buying store-bought?
Making homemade sausage allows you to control the quality of ingredients, ensuring that your breakfast is free from unwanted additives, preservatives, and fillers commonly found in store-bought varieties. Plus, crafting your own sausage gives you the freedom to customize flavors and textures to suit your preferences.
2. Can I use any type of pork for this recipe?
While pork butt is traditionally used for its optimal fat content and flavor, you can experiment with other cuts of pork, such as pork shoulder or leaner options, depending on your dietary preferences. Adjusting the meat selection may slightly alter the taste and texture of the sausage but allows for versatility in your recipe.
3. How do I achieve the perfect texture for the sausage patties?
Achieving the ideal texture for your sausage patties is all about controlling the grinding process. Utilize your Blendtec or Vitamix blender to pulse the diced pork until you reach your desired consistency. Be mindful not to overblend, as this can result in a mushy texture. Take your time and pulse in short bursts to ensure a uniform and satisfying texture.
4. Can I prepare the sausage patties in advance?
Absolutely! These sausage patties are perfect for meal prep. Once formed, you can refrigerate them for up to a week or freeze them for longer-term storage. Having a batch of pre-made patties on hand makes for quick and convenient breakfasts throughout the week. Simply thaw and cook as desired for a delicious and satisfying meal.
5. How do I cook the sausage patties for optimal flavor and texture?
For best results, sautรฉ the sausage patties over medium-low heat in a non-stick pan until browned and cooked through, approximately 10 to 15 minutes. Cooking them slowly allows the flavors to develop fully and ensures a juicy and flavorful outcome. Enjoy them hot off the pan for a delightful breakfast experience!
ย
I was looking to find a lower fat fresh breakfast sausage as an alternative to the typical low fat turkey sausage (way too low in fat, sticks to the pan and the color is actually GRAY! YUCK!!) I wanted to compare the fat and calories to store bought, but the serving size is incorrectly stated as 1 gram. Two frozen brown and serve sausage patties is 50 grams, meaning that this recipe would have 460 grams fat and over six thousand calories!
Thanks for the correction ๐ Can’t wait to try it!
You’re so welcome! ๐
Hi Karen! So sorry about that! When I changed recipe plugins unfortunately the serving area in the nutritional info wasn’t seamless. *sigh* But thank you for pointing it out so I could fix it! ๐ Hope you enjoy, I love this sausage recipe! ~Tarashaun
