3 QUICK & EASY CHAMPAGNE COCKTAILS
I’mย always on the hunt for quick and easy cocktail recipes, and I truly feel thatย easy champagne cocktails are a MUST atย any Mother’s Day Brunch, Bridal Shower, or really any gathering of the ladies in your life! My favorite champagne cocktails to make in my blender is an assortment of pureed fruit for homemade bellini’s! Just blend your favorite fruit with simple syrup*! It’s a nice and welcome change from the classic mimosa, especially in the summer and your friends and family can choose from different flavor options. ๐Ÿ™‚

If you’re short for time and still want to WOW your guests, try getting store-bought exotic blended juices that are also super healthy for you (i.e. organic, non-gmo, etc.). My favorites are the new Sambazon blends, which combines their famous acai with pomegranate juice and blueberries for one antioxidant powerhouse that tastes great! I also love Suja, they’ve got so many interesting mixes packed with fruits and veggies that taste GREAT!

My final favorite inexpensive and really gorgeous champagne cocktail display, is one my boyfriend’s mother actually taught me when she threw her new daughter-in-law’s Bridal Shower: edible hibiscus flowers whichย open up when topped with champagne! I got a jar for $9.99 at BevMo which had 11 flowers in it, making that and a $7.99 bottle of Prosecco one low cost way to make a champagne cocktail almost identical to one I tried at The Wynn Las Vegas for $28!!

Ingredients
  

Easy Champagne Cocktail #1 Homemade Bellini:

  • 2 cups fresh or frozen fruit thawed
  • 1/3 cup simple syrup*
  • Chilled Prosecco or champagne or sparkling wine

Easy Champagne Cocktail #2 Store bought Mimosas and Bellinis:

  • Your favorite store bought exotic juice or smoothie blend
  • Chilled Prosecco or champagne or sparkling wine

Easy Champagne Cocktail #3 Hibiscus Flowers:

  • Hibiscus flowers
  • Syrup from Hibiscus flowers
  • Chilled Prosecco or champagne or sparkling wine

Instructions
 

  • Make sure to chill your champagne or sparkling wine!

Simple Syrup:

  • In a saucepan, boil sugar and water over medium-high heat until sugar has dissolved. Remove from heat, cool to room temperature and transfer to a jar. Store in a cool pantry or refrigerate.

Easy Champagne Cocktail #1 How to Make Bellini:

  • To make the puree you can use fresh or frozen fruit, if it's frozen make sure it's thawed.
  • Puree fruit and simple syrup in your blender.
  • For 2 cups of fruit or bag of thawed frozen fruit, I use about 1/3 cup of simple syrup.
  • For smaller batches, I use 1 cup of fruit around 3+ tablespoons of simple syrup
  • Taste; add more simple syrup if desired.
  • Strain mixture through a fine mesh sieve.
  • Now if you make this ahead of time, cover it and store in the fridge for the next day.
  • Pour 2 tablespoons strained puree into your Champagne flutes.
  • Fill with chilled prosecco or sparkling wine.

Easy Champagne Cocktail #2 Store bought Mimosas and Bellinis:

  • Pour favorite fruity smoothie or juice into your Champagne flutes.
  • Fill with chilled prosecco or sparkling wine.

Easy Champagne Cocktail #3 Hibiscus Flowers:

  • Add 1 Hibiscus Flower and 1 teaspoon syrup into your Champagne flutes.
  • Fill with chilled prosecco or sparkling wine.

Notes

* I make simple syrup with 1:1 filtered water and raw sugar, which will make a brown color simple syrup, but any sugar can be used
